Bell Pepper Muffins

Ingredients: 1/4 cup chopped red, yellow and green bell peppers
2 tablespoons butter
2 cups flour (can use gluten free flour)
4 Tbs. sugar
1 Tbs. Watkins baking powder
3/4 teaspoon salt
1/2 teasp. dried basil
1 cup low fat milk
1 egg
2 egg whites

Preheat oven to 400f. Spray a muffin pan with Watkins cooking spray. In small skillet cook peppers in butter about 3 minutes. Set aside.
In large bowl combine dry ingredients. In small bowl combine wet ingredients. Add peppers to wet mixture. Stir into large bowl of dry ingredients. Stir well. Spoon into muffin pan. Bake 15 to 20 minutes or until toothpick comes out clean. Cool 10 minutes then remove from pan.
